35 mins prepServes 4
Say goodbye to boring vegetarian tacos! These High-Protein Soya Tacos are incredibly juicy, packed with rich spices, and feature the creamiest Mint-Avocado spread you’ll ever taste!
1. Prep the Soya: Boil soya chunks in vegetable stock. Cover, let rest for 15 mins, then strain excess water completely.
2. Make the Filling: Sauté the boiled soya chunks in a pan with oil. Add all the dry spices and brown sugar. Cook for 3-4 minutes until nicely coated.
3. Blend the Spread: In a mixer, blend the avocado, mint, coriander, ginger, garlic, chilli, cumin, yogurt, lemon juice, salt, and water until you get a smooth paste.
4. Cook the Bread: Mix wheat flour, black chickpea flour, salt, baking powder, butter, and warm water. Knead into a dough, divide into small balls, and roll flat. Cook both sides on a skillet.
5. Assemble: Take a taco bread, spread the mint-avocado dip, add the spiced soy filling, and top with hot sauce/salsa, fresh chopped onions, tomatoes, and coriander.
